My doubles mega-garchomp is at the moment running : Hone Claws. Rock Slide, EQ, Protect. I put Hone Claws on it to make Iron Tail actually hit. But now I dont know what to replace iron Tail with - Rock Slide or EQ???

Is protect really needed?
@MechSteelix Protect is a stable on most Doubles Pokemon.

My personal opinion is that use shouldn't replace either Rock Side or EQ for Iron Tail. Rather, I would replace Hone Claws for Iron Head. While not as powerful as Iron Tail, it's still powerful and doesn't require the risky setup like Iron Tail does. But, that's just my two cents.

But look at this:

252 Atk Mega Garchomp Iron Head vs. 252 HP / 0 Def Sylveon: 304-358 (77.1 - 90.8%) -- guaranteed 2HKO

252 Atk Mega Garchomp Iron Tail vs. 252 HP / 0 Def Sylveon: 380-448 (96.4 - 113.7%) -- 81.3% chance to OHKO
But if you miss its 100% not to damage the opponent.
Besides Iron Head has that neat flinch chance.
But with Hone Claws up it wont...
Setup is generally poor in VGC unless you're Mega Salamence, Mega Gyarados, or PuP Kangaskhan. I would scrap both Iron Tail and Hone Claws for Earthquake and Rock Slide, then add a Heatran or something to check Sylveon (who's not even that much of a threat anymore… most VGC players predict her to drop in usage soon).
