Mirror Coat and the item Metronome?

If I use mirror coat consecutively against a Pokemon with only special attacks will the power be boosted each time or does mirror coat only do 2x the damage received no matter what?

No, Mirror Coat's damage is based on the damage that you receive by the opponent, and cannot be boosted by any item such as Metronome. So it will always do twice the damage received regardless of stat boosts or items.
