Any item that affects the egg, so yes, it would include items that pass down IVs.

As, you said, that Incenses affect breeding, but there are a few other items that affect breeding.

• Light Ball
• The EV-enhancing items, (Power Weight, Power Bracer, Power Belt, Power Lens, Power Band, and Power Anklet) excluding the Macho Brace.
• Destiny Knot
• Everstone (Thanks Astro)
