I got two Volcanion from codes, one is Jolly, one is Quirky. So I guess I have two questions not just the one.
Which one would be better to try and work with? (can I work with any?)
Can I make Jolly Volcanion work somehow...or is my best bet dealing with the neut nature....

If I can make any of these work, I'd also like a moveset and ev set to train it in as I am still not "skilled" enough to figure those out myself.

Volcanion still does have a respectable Attack base stat of 110, and a moderate Speed of 70, so you could probably make it work. It also has a decent physical movepool, consisting of moves such as Flare Blitz, Earthquake, Stone Edge, Flame Charge, Brick Break, or even Superpower. You could probably still run Steam Eruption with the high base power as a mixed sweeper. Scarf could be a good item to boost its mediocre speed, and a full attack set as well.

Volcanion @ Choice Scarf
Ability: Water Absorb
EVs: 252 Atk / 252 Spe / 4 SpD
Jolly Nature
-Flare Blitz
-Stone Edge

I guess it could work but the Special Volcanion is far, far better. I did a test run and while Physical Volcanion caught some enemies off the grid, it was more or less underperforming next to the Special one.

Try to raise both and then compare for yourself.

Thats what I was thinking...is it worth training the Quirky Volcanion as a special attacker and see if it can do alright? or should I just leave that one as I only have the two :/

Having a Jolly Volcanion can work, but it won't be able to use power special STAB water moves. You may want to change a water move to a rock or fighting move.
