In detail, what are Pokemon Egg groups and how do they work?

Nah this fine. That page is outdated and doesn’t mention basic stuff, such as the incompatibility of Pokémon in the Undiscovered group.

Egg Groups determine what Pokemon can breed with what Pokemon. In order for two Pokemon to breed, they must be opposite genders and have at least one matching Egg Group. The one exception to this is Ditto, who can breed with any Pokemon in any Egg Group, excluding the Undiscovered Egg Group. Pokemon in the Undiscovered Egg Group, for example, all baby Pokemon, cannot be bred with anything, including Ditto and other Pokemon in the Undiscovered Egg Group.

Couldn't Gardevoir and Gallade breed together while they are in the same Egg Group? (I may be completely wrong though)

You shouldn't believe everything you hear. Gallade and Gardevoir are both in the same egg-group, so as long as the Gardevoir is female then they can breed.
