Could you glitch get a shiny mew?

Question

So if you use the mew glitch from RBY and got a mew with DV's that would make it shiny if it were in gen 2, and then transfer it into gen 2, will you get shiny mew?

You could also transfer a regular Mew into Gen 2 and use the Coin Case Glitch to make it shiny.

I’m pretty sure the Mew in the Mew Glitch can’t be shiny, as wild encounters can’t have the right DVs

Yes you can. It's just like any (reasonable) Pokemon you obtain. if it has correct DVs then you could make it shiny if transferred. It might take a while but it is still possible.
