I put my Snorlax in the daycare with a ditto and I GOT A SNORLAX. Why did that happen

This is normal. In Gen 2 to 8, Snorlax will always produce Snorlax eggs instead of Munchlax eggs, unless it holds Full Incense (introduced in Gen 4).

This is because Munchlax is a baby Pokemon first appearing in Gen 4, while Snorlax is an original from Gen 1. The designers wanted some rationale for why breeding Snorlax would not produce Munchlax in previous games.
