When transferring from Go to Let’s Go, do the Pokémon’s IVs in Go have any affect on its IVs post-transfer?

Yes. The Attack IV also covers the special attack IV, and Is converted like DVs convert into IVs. Defense covers special defense as well and is also converted appropriately.

The only stat you really can’t control is speed.
