I have a neutral Rhyperior in Ultra Sun
Moveset:

  1. Earthquake
  2. Stone Edge
  3. Megahorn
  4. Swords Dance / Rest??

It is mostly defensive
Which move should I keep?

But, if you wanna know for Gen 8 RU, I'd say no, Rhyperior can't use the move rest to it's full extent.

RU has got Offensive Gods (for the tier atleast) like Gardevoir, Zarude, and Thundurus (and many more RU got whatnot) which can really bump a Rhyperior.

*252 SpA Choice Specs Gardevoir Moonblast vs. 244 HP / 188 SpD Rhyperior: 277-327 (64.1 - 75.6%) -- guaranteed 2HKO after Leftovers recovery*. Seeing the 2HKO, you would seriously not be tempted to click on Rest. Even the Scarf sets of Gardevoir 3HKO it, which means, after waking up, you would AGAIN have to click Rest, or switch...

*252 Atk Zarude Power Whip vs. 252 HP / 252 Def Solid Rock Rhyperior: 369-435 (85 - 100.2%) -- 6.3% chance to OHKO* Thats Zarude, and me, I won't really be tempted to stay in and click... Rest.. Tho 252 Def is weird.

*252 SpA Thundurus Grass Knot (120 BP) vs. 244 HP / 188 SpD Solid Rock Rhyperior: 468-552 (108.3 - 127.7%) -- guaranteed OHKO* Hmm? Thundurus? Well... Nope, it won't work.

*0 SpA Vileplume Giga Drain vs. 244 HP / 188 SpD Solid Rock Rhyperior: 324-381 (75 - 88.1%) -- guaranteed 2HKO after Leftovers recovery* Vileplume, I added, as it's common in RU. You would really tickle the physically defensive ones, and they then begin to troll you with the Drain, Giga Drain.

A good Moveset for Rhyperior would be:

Rhyperior @ Leftovers
Ability: Solid Rock
EVs: 252 HP / 16 Atk / 240 SpD
Adamant Nature
- Stealth Rock
- Earthquake
- Stone Edge
- Megahorn

or,

Rhyperior @ Choice Band
Ability: Solid Rock
EVs: 252 Atk / 4 SpD / 252 Spe
Adamant Nature
- Earthquake
- Stone Edge
- Megahorn
- Ice Punch

All in all, Rest seriously won't work on a Rhyperior. The main problem is it's unreliability, because of the sleep. Even if you go RestoChesto, you would sorely miss the Leftover's recovery, as this is more or less a one time nuke. It's a good Stealth Rock setter though, and can utilize Swords Dance too.

Rhyperior is currently in the A- rank, which is higher than Bronzong. https://www.smogon.com/forums/threads/ss-ru-viability-rankings-crown-tundra.3676023/ Passimian and Inteleon combined get less than 0.4% usage in RU, so I think Vileplume and Gardevoir are the only real threats in this answer.
The VR tht i checked, are frm the RU pg on Smogon.....

This is the top voted Rhyperior S/M moveset. None of the movesets have Rhyperior with Rest. This is from Smogon. Rhyperior is most likely not a good user of Rest as your opponent can switch into a Water or Grass type and quickly eliminate Rhyperior while it's asleep.

Can you explain why rest isn't used in any of the sets, or why that is the top moveset?
Smogon movesets are good for competitive battles. The question never said he/she/it wants to use Rhyperior in competitive battles.

Rhyperior really wants at least 3 attacks to threaten different Pokemon that are common in RU, such as Togekiss, Cobalion, and Zarude. Its best status move is stealth rock because stealth rock is good. This is the moveset that I recommend.

Should you say it's not good with rest and why? Because that's the question.
because it can't know rest when it also knows 3 attacks and stealth rock?
I meant you say that in the answer more specifically
