Do ultra beasts count as legendary or mythical Pokemon or even Pokemon at all???

They are in like their own category, just like legends and mythicals. And they are obviously Pokémon, they use moves and you can capture them in pokeballs

Ultra Beasts are their own classification of Pokemon, Seperate from Legendary and Mythical Pokemon. They come from another in-lore dimension called Ultra Space and could very well be considered regular Pokemon in their own dimension.
