It's because of Illusion. When the new Zorua appeared, it's treated as the last Pokemon in the opponent's "party," so the first Zorua disguised itself as the other Zorua, including its gender. False Swiping it will remove the illusion and show what its actual gender is.

Oh my god thank GOD it kept changing gender and I'm on the verge of tears thank you thank you i thought i was crazy---
HEY DOES THAT MEAN I LIKELY KILLED AN ILLUSIONED SHINY ALREADY
Krlw please help me. Would i be able to tell if i find a shiny?
Don't worry, I've only ever seen the older Zorua disguise itself as the newer one while SOSing. I've shiny hunted Zorua using SOS encounters twice, and the shiny appears shiny when it first appears. In theory, if a shiny called a non-shiny, then they would both appear normal, but by that point you would already know that one of them is shiny, so even if you forget which side it was on, just False Swipe them to remove the disguise and you should be fine.
Thank you ;w;
