In vgc at least battles last like 10 turns, so you aren't living long. Plus, there's less Pokemon, so getting an ohko can hugely impact the game, as it becomes a 4v3 and puts you at an advatage. That's just my experience with vgc though

The perspective people see vgc in is to attack at full power, using the strongest moves available to sweep.

This might not be true as Curious Medicine only works on switch-in, as ~Mega Charizard Y~ said, "lack of switching in doubles".
An item that may cancel out all stat changes but can only be used once is a White Herb, but like I said, it can only be used once, or they are setting up something like a Nasty Plot+Overheat/Draco Meteor strategy, that way it msy waste a turn but you can hit back with a boosted move and you don't have to suffer from Special Attack drop.
Draco Meteor is used for a few reasons. First, the ine sm 4evr mentioned, the second one is that Draco Meteor is the best Dragon type move that most Dragon type Pokémons can learn, other than signature moves like Spacial Rend. Also, it has 90% accuracy, which isn't perfect, but is still high for a 140 base power damaging move.
Overheat is used as sm 4ver mentioned again, and the second one is the same as the last point of why Draco Meteor is used, and Overheat also has better accuracy than Fire Blast. Fire Blast has 85% accuracy while Overheat has 90% accuracy.
Strategies to counter Draco Meteor, Overheat and Leaf Storm(falls in the same category):
- Use the item White Herb
- Use a move like Nasty Plot
- Use a Pokemon with Contrary
- Use a Pokemon with U-turn, Volt-Switch or Parting Shot and change to Galarian Slowking
