I know only way; using EV berries. I heard that first decreases EVs to 100 if higher, the rest...? And, does migrating reset them too (probably not, yeah)?

I think there's some way to do it in super training in Generation 6.
Yeah, you can reset certain stats using the stat reset bags or reset everything using the reset bag. I don’t know if that’s what they’re actually called, though.

No, that's the only way to remove EVs, apart from breeding to get new Pokemon.

Each berry reduces by 10, or it reduces to 100 if over 100. So if you have 200 EVs then one berry reduces to 100, the next to 90, then 80, 70 and so on. Therefore 11 berries completely resets that particular stat.
