I've been thinking about using this as some pseudo stall. I don't know if I throw in a SpDef+HP invest would be kind of useful. I'm not at all a good competitive player, I'm just trying to learn a bit. Also Corviknight is one of the most badass looking Pokémon, lol.

If you're playing in-game, Bulk Up is one of the better Corviknight sets, however that's only because Corviknight's offensive movepool is small. You generally want to brute force your way past everything with immediate power, however Corviknight gets few useful offensive moves in game.

Competitive is a different story, and the true answer to this if you're playing competitively is with what your team needs. Does it need a Defogger? In that case, the Defog set is generally better. However, if you already have one, Bulk Up can work pretty well. About running HP and Special Defense, Bulk Up Corviknight usually runs Body Press so you either run HP and Defense with 4 Special Defense EVs, or 252 HP and a large amount of Defense EVs with the rest piled into Special Defense to be more bulky on the Special side. I feel like 252 HP / 252 Def / 4 SpD is generally better. Bulk Up also fits on balance better than on stall or semistall.

Defog Corviknight goes 88 spd with the rest into hp and def with a +def nature, usually impish. This allows it not to die to Kyurem's freezy dry after rocks
It also allows it to tank two Specs Psychic from Tapu Lele after Rocks damage.
252 SpA Choice Specs Tapu Lele Psychic vs. 252 HP / 0 SpD Corviknight in Psychic Terrain: 164-193 (41 - 48.2%) -- 69.5% chance to 2HKO after Stealth Rock

While:
252 SpA Choice Specs Tapu Lele Psychic vs. 252 HP / 99 SpD Corviknight in Psychic Terrain: 147-173 (36.7 - 43.2%) -- guaranteed 3HKO after Stealth Rock

Also @First Sinner I think Defog Corv usually runs Relaxed instead of Impish, as it carries U-Turn often.
True but that probably depends on the set. If u turn then it most likely is relaxed but idbp usually goes impish since there is no need to outslow something
I was talking about Bulk Up sets using 252 HP / 252 def / 4 spd. I know the defog set runs those evs
