This may be a confusing question, so I will explain. By 3rd version, I mean the 3rd game that was released 2 years after the 2 main titles. For example, Ruby and Sapphire were the main titles, and 2 years later came Emerald. Or that Diamond and Pearl were the main titles, and 2 years later came Platinum. Does anyone know what I mean? If you do? What are the games like Platinum and Emerald called?

Pretty sure they're just called "third versions."
Bulbapedia refers to them as solitary versions, third versions, and upper versions.
There was a stream where Pokemon Company themselves mentioned those games and I can't find it but I thought it was in a SwSh dlc announcement
I just call them definitive editions, but I don't think they are officially called that.

2 of the game designers (Shigeru Ohmori and Kazumasa Iwao) have referred to Emerald, Platinum, and USUM as "upper versions" in an interview.

Most generations feature an "upper version" title—often referred to by fans as a "third version"—a follow-up game or pair of games released after the first games of the generation that takes place in the same region with added features.

Fans also sometimes use "solitary version", although I don't think this is what they were ever officially called.
