Is there a game that I can catch every Pokemon in Because I would like to do that.

I think you can catch every Pokemon in the regional Pokedex in Legends Arceus.
what does that mean?
The regional Pokedex is the list of all Pokemon in a region (Hisui in the case of Legends Arceus). Most games have version exclusives (eg. you can't find a wild Oddish in Blue), so you can't catch every Pokemon in the region.

Yes. You can catch all the Pokémon in a Switch Lite game, that being Pokémon Legends Arceus. Since the whole thing about the game is about "making the first Pokedex", and "catching all the Pokemon" this is pretty obvious.

Also, you can also catch all the Pokemon in Go(?) I think.

Not all the 3rd iterations have zero version exclusives. Crystal lacks the Ampharos line, for starters

Legends arceus is also the first game you can get another starter from the professor. Also, the space time rifts help a lot to catch them all.
Hey wait you need bspd and swsh to get darkrai and shaymin, or get them in another game and transfer them.
Shaymin and Darkrai aren't in the regional dex of PLA, they're add-ons
