By stack means if I use pay day and I useally get 1$ if I use it again that total will go up to 2$.

Post-Gen III, Pay Day gives 5x the user's level in coins per use.

Pay Day now scatters coins equal to five times the user's level each time.

And yes, each use of Pay Day (or Make it Rain for that matter,) stacks. You can also stack Pay Day with Happy Hour, (event exclusive,) and Amulet Coin to get a maximum of 2000 Pokedollars per use. This is technically possible with Meowth or Persian, considering there was a Happy Hour Meowth event in Gen VI, but it would probably be easier to obtain this on a Smeargle.

I was a bit confused with your answer so I went and read your source. It says Gen 1 gives a max of 200P per use, (although with old man glitch even higher) with a maximum per battle of 999,999P. It also mentions items being able to increase the number elsewhere. Why are you only answering for newer gens when the question is broad and doesn’t specify? The question clearly is asking how much it can give, and the answer is 999,999 technically.
Considering all of OP's questions regard SV, I decided to give a straightforward answer for SV.

I also answered how much each Pay Day will give and whether they stack or not. OP made no mention of a "maximum possible" amount but if need be, considering that each Pay Day does indeed linearly stack with each other, it's common sense that the maximum amount possible is the maximum amount of money holdable in-game, unless stated otherwise
