If I Fling a Berry onto a Ripen Pokémon, is the Berry effect doubled?

Yes, that is true, although the only line that gets it is the apples which is why it rarely pops up.

From Bulbapedia:

If a Pokémon holding a Berry uses Fling, that Berry will activate for the target (even if its usual trigger condition is not satisfied)

This means the Berry will technically be consumed by the Pokemon with Ripen, so the effect from Ripen still triggers.

Test with Apricot Berry (Normally it raises 1 stage of SpDef, but here it raises 2 stages)
Test with Sitrus Berry (Normally it heals 25%, but here it heals 50%)
