For hitmonlee you can just get an adamant nature and evolve it but for Hitmonchan you need to either get it in +Def nature or give irons or ev train its Def a little to evolve and that would ruin the whole ev training on the stats you actually want to invest evs in.(And of course you wouldnt ev train a hitmonchan in Defense, most are adamant)
And maybe same goes for hitmontop too.

And in smogon, the natures are either adamant or jolly and none of them have ev investments in Def

Once you have evolved the Tyrogue into a Hitmonchan, you can give it EV reducing berries to reset its EVs to the amount you want.

EV-reducing berries

There are also a set of berries that will reduce your Pokemon's EVs. They are useful if you miscount EVs or simply want to change the EV distribution. All the berries can be obtained from the Berry Master on Route 208:
#21 Pomeg Berry (HP)
#22 Kelpsy Berry (Attack)
#23 Qualot Berry (Defense)
#24 Hondew Berry (Sp. Attack)
#25 Grepa Berry (Sp. Defense)
#26 Tamato Berry (Speed)

If you have over 100 EVs in a stat, the first berry will reduce them to 100, while further berries will decrease the EVs by 10. Therefore if you want to remove all EVs you will need 11 berries for the stat.

oh right...Ive been thinking about this question for a long time and how did I not realize there were berries....
