If you add up all the percentages the number is way over 100%, and since I don't have the game, I don't have a clue how to read these charts. What do the percentages really mean?

Every time you encounter a Pokemon, you have a greater than 100% chance of encountering a Pokemon.
I think it means something along the lines: "when you're in w area and you cross into x biome, the game will spawn y Pokemon z percent of the time". But I don't really know.

It's the percentage of the chance of each pokemon spawning. The game doesn't make the Pokemons' chances compete with each other, rather rolling for each separate Pokemon to see if they are going to spawn there.

For example:
Deerling has a 90% chance of spawning while Cubchoo has a 10% chance of spawning. The game doesn't roll for them to compete with each other (for example Deerling spawning instead of Cubchoo if the game rolls that.)
The game will roll for each separately.
If both rolls are successful, both Pokemon will appear while if only one is successful, only one will appear. None of these two Pokemon might appear too if you have extremely bad luck (which is very unlikely.).

Ok, I think I understand. I guess in this game, contrasting Sword and Shield, Pokemon don't spawn in clusters around grass, but more spread out across wide fields of an area
