Larvesta can get more attack stat than Volcarona. What?

Question

Larvesta can get more attack than Volcarona. Well what will happen if Larvesta starts evolving after it have got attack stat over 240(Volcarona's maximum)?WHAT WILL HAPPEN?! I don't know.

When Larvesta evolves, the EVs and IVs in Atk will remain, but they will be calculated out of Volcarona's Atk stat, not Larvesta's.
