The EV system is exactly the same, however you can now gain EVs when at level 100. This means you can completely change your EVs at any time by using the EV-reducing berries and training again.
The experience system is slightly different in that you get more EXP if you battle a higher level Pokemon. It's a sliding scale based on the ratio of your level to the opponent's level.
