Because I don't have any games from Gens 6 or 7, I was only able to test this for Gens 4 and 5 (in HeartGold and White, respectively). For both games, I found that the "met at" date is the date that the Pokémon was caught, not encountered. ie, the "next day".

Should be good enough.
I just tested this on Moon: get an encounter at 11:55, hold off on throwing a Quick Ball until 12:05, and it gets credit for the new day in its summary.
