So I am struggled with let Ash Greninja learn Gunk Shot or Ice beam.

I would use Gunk Shot for these reasons;

Ash-Greninja is better at physical moves.
Gunk Shot has a 30% chance to poison the target.
Although Ice Beam can freeze the target and has 100 accuracy, Gunk Shot had 120 power and can deal high damage against those Fairy types and Grass types you're weak to.
Here is a moveset I would suggest for this;

Greninja @ Poisonium Z(To make Gunk Shot even more powerful).
Ability: Battle Bond.
Nature: Hasty.
Water Shuriken(Signature Move).
Gunk Shot(The Move You Suggested + Coverage).
Waterfall(High STAB + works with stats).
Rain Dance(Makes Water Shuriken and Waterfall more powerful).

EDIT: I read his stats wrong; Ash-Greninja is actually better at Special Attack, but it's attack it very good too. Either way, I'd still keep Gunk Shot for the coverage.

Greninja, or Ash Greninja, are both much too frail to run Rain Dance. In the turn you used Rain Dance, you could’ve used Waterfall instead and if your opponent didn’t get OHKO’d by that, it probably will be next turn. And if not, it’s probably because your running a base 80 power move when you could be running a base 110 power move, Hydro Pump
Also you don’t run Water Shuriken just because it’s Greninja’s signature move. I understand it’s very useful because of it’s priority, but use that explanation, not “Signature Move”

If you’re running a Hasty Nature, I’d recommend a mixed set with Gunk Shot, Ice Beam, Hydro Pump, and Dark Pulse with 252 Spe/252 SpA/4 Atk for the EVs, and a Life Orb. However, a much more viable set would be 252 Spe/252 SpA/4 SpD with a Timid Nature and a Choice Specs with the moves Ice Beam, Water Shuriken, Hydro Pump, and Dark Pulse. In short, for the set you are running I’d recommend both. A better set would be the smogon suggested set, not the one you’re using.

Uh no, his special attack is 8 higher than his attack, which it clearly states in that link I have no idea what you’re talking about. Also https://www.smogon.com/dex/sm/pokemon/greninja-ash/. Pokémon are generally better sticking to one type of offense because EVs and Natures make one attacking stat higher than the other. Also, Ash Greninja’s physical movepool is so shallow a drunk 3 year old couldn’t drown in it

Also I see no point in the 'Choice' items because you can only use one move. Like... let's say you have some Pokemon with a strong Fighting type move such as Aura Sphere. Your opponent sends out a Lucario, so you use Aura Sphere. It KOs the Lucario. But what if you do that and your opponent sends out a part Ghost type?? You're stuck with Aura Sphere, but the opposing Pokemon is immune to it!!
That’s one downside of having a 50% boost to either your attack, speed, or special attack. Just because you see no point in it doesn’t mean it’s useless. If the scenario you presented actually happened, then you’d switch. Besides, that almost never happens, and there are many OHKOs uneXcessible without a choiced item. (Also uneXcessible lol)
