First off, you have to hold the B button while riding Stoutland to start searching. Then, if you're near a hidden item, a light blue exclamation mark will appear above Stoutland. When you find the item, the exclamation mark will change to orange and purple and Stoutland will start barking. Then you press the A button, and you'll pick up the item.
