It doesn’t seem like it would make sense narratively, but it’s such a fun mechanic (not to mention the only way to get certain Pokémon) that I would be disappointed if they stopped once you beat the game.

They still happen in the post-game

This source maybe doesn't explain about "do space time distortion still happen after post-game", but I'm quoting a part in the article which talks about Space-Time distortions:

After catching Dialga and Palkia and beating the game, stronger Pokemon with higher levels will appear inside Space-Time Distortions. Make sure to check your team before heading inside one as the experience will be more difficult.

So after you catch Dialga and Palkia and beating the game (post-game in other words) the Space-Time distortion still happens.

And for more proof, in the list of Pokémon in Space-Time Distortions, you could find the Typhlosion line in the Crimson Mirelands after finishing the story, and Decidueye line in the Coronet Highlands and Samurott line in the Alabaster Icelands after finishing the story.
