I'm not sure how to pronounce Golem... I've looked in the pronounciation guide for all Pokemon thru Alola, and I'm not sure how the letter O is supposed to be guided in the pronounciation guide. Does Oh mean long O and O mean short O, or is it the other way around?

Golem's name comes from Golem, which is a figure in Jewish folklore. Its name is pronounced with a long O.

Also, based on personal experience, Golem is a character in the Supercell games Clash of Clans and Clash Royale, which looks exactly like the pokémon and is also pronounced with a long O.

Source: Experience, the Etymology page for Golem pokémon and the Wikipedia page for Golem, the Jewish character.
