Can Ditto and Arceus breed in Pokemon Violet?

I wanna get full team of arceus for gits and shiggles and most likely also shiny hunt

Unfortunately not. Arceus is part of the Undiscovered Egg Group, meaning it cannot breed with any Pokemon (including Ditto). Most Legendaries and all Baby Pokemon are also in this Egg Group.

Yeah, all legendary/mythical Pokémon (plus some others like ultra beasts, paradox Pokémon, baby Pokémon, and most, if not all, genderless Pokémon) are in the undiscovered egg group.

If you're excluding Legendaries, Mythicals, Paradoxes, are UBs, then I don't think your comment about genderless Pokemon is accurate.
