I just recently went for a shiny Murkrow and now I wanna try to EV train it for when it becomes a Honchkrow. (I'm a little new to EV training and I've tried to EV a tyranitar I caught and failed but still am learning the basics of EV training and wanna learn about it more.)

What do you want to do with a Honchkrow? Do you want to battle other players, the Battle Tree, or something else?
I am trying to make a competitively good honchkrow but really am just having it to use in the battle tower or to help me make a full shiny team. I forgot to put but it has a Gentle nature and has Super Luck.
If you just want to use it in game, I would reccomend you to not bother with EV training. It's a very long and tedious process with very minor benefits as far simgle player is concerned. If you want to use it in competitive, I reccomend just maxing out attack and speed EVs.
Thank you I’ll do attack and speed with a one of the defenses because they don’t seem that good and I want it to live more than one attack.
EVs are best when they reinforce your mon's role. Since Honchkrow isn't going to be effective in a defensive role, just do Atk and Spe.

Singleplayer campaign of Ultra Sun and Moon
If you just want to use Honchkrow in a casual playthrough of USUM, EV training is not reccomended. It's a very tedious process and the benefit is not worth the effort in my opinion. If you do insist on EV training, I reccomend maxing out attack and speed so that you can KO opponents before they get a chance to attack.
Competitive Singles or Battle Tower
Max out attack and speed EVs to hit as hard as possible and hopefully KO opponents before they get a chance to attack. Honchkrow has terrible defenses anyways, so investing in its defenses doesn't make much of a difference. The last four EVs dont really matter. The Moxie ability is reccomended as it allows Honckrow to easily snowball into a sweeping threat with just one or two KOs. I also reccomend changing its nature to Adamant so that it can OHKO as many opponents as possible. Note that for the last two reccomendations you will have to transfer it to a Gen 8+ game, after which you wont be able to send it back. The abilities and nature your Honchkrow has are not the best options for competitive and I reccomend catching another Honchkrow with the Moxie ability if you want to be optimal.
