They are so similar in almost every way that makes them unique!
for example their eyes are so similar - golurks left eye is garganacl's eyes upside down,
they have pointy hat things,
golurk is based on a jewish golem of prague (its not as nice as you think) and garganacl is based of the egyptian pyramids; The egyptians built them as tombs to protect dead people (using salt!) and the golem protected alive people.
golurks a ghost type and garganacl's signature ability halves ghost type moves.

Also did the anime reference any garganacle/golurk lore or some info somewhere?

don't coincidences like this appear, like, everywhere throughout the franchise? everything you listed just seems to exemplify how unrelated they are. salt protecting from ghosts/demons is an incredibly common concept and is completely unrelated to golurk. their eyes being similar and "pointy hat things" are absolutely just a design choice they happen to have in common. if that's enough to make you think there are intentional similarities, are you also curious how simipour and uxie are related?
my friend that went to pokemon park kanto told me that there was a golurk and garganacl statue greeting you, I didn't want to put it in there, i just thought if there was a connection there surely there must be golurk lore in the anime.
Most definitely just coincidence. It wouldn't surprise me that Pokemon put the haunted clay golem and the salt golem together as similar enough looking but distinct and varied Pokemon to spruce up the visuals of the park, but they aren't related in any sort of biological or lore way unless it gets stated otherwise.
