Also, what nature should it have and what EVs should I train?

I usually prefer 4 HP/252 Def/252 SpD bold. Moving EVs from HP to special defense increases special bulk more than it decreases physical bulk.

252 Atk Jirachi Iron Head vs. 252 HP / 252+ Def Eviolite Chansey: 144-171 (20.4 - 24.2%) -- guaranteed 5HKO
252 SpA Jirachi Flash Cannon vs. 252 HP / 4 SpD Eviolite Chansey: 70-84 (9.9 - 11.9%) -- possible 9HKO

252 Atk Jirachi Iron Head vs. 4 HP / 252+ Def Eviolite Chansey: 144-171 (22.4 - 26.6%) -- 22.5% chance to 4HKO
252 SpA Jirachi Flash Cannon vs. 4 HP / 252 SpD Eviolite Chansey: 57-67 (8.8 - 10.4%) -- possibly the worst move ever

Eviolite Chansey is better in most situations. It has better bulk overall, specifically in Defence where Blissey is extremely lacking. This stops Chansey from being worn down by physical attackers too quickly. The only thing that really gives Blissey a reason to be used is Leftovers, but that isn't a good enough reason to drop the extra bulk. Blissey also has a better Special Attack stat that is worth keeping in mind, although sets the use this are rare and force you to leave out one of Blissey's other moves. Seismic Toss is better for dealing damage.

Both of them should use max HP and Defence, as this gives them the best chance against physical attackers as possible. Their Special Defence is already good enough due to its base stat and the huge HP, so EVs are better left to Defence. Bold is a good nature for both of them, as it lower the useless Attack stat and improves Defence slightly.

Also, don't forget softboil pretty much makes leftover useless
I think you should copy your first paragraph to answer this question. https://pokemondb.net/pokebase/56018/ It's the oldest Chansey vs Blissey question we have, and the answer it has now isn't that great.

In My Opinion, Leftovers Blissey Is Better First, Yes Eviolite Chansey Is Better In Special Defense Blissey Is Double Good In Attack And Still Better In Physical Defense. But No One Falls For Chansey With A Special Move Anymore. But They Do For Blissey Especially Leftovers Blissey Because Leftovers Not Only Catches Up With The Divisble It Will Have Better Defense And Again No One Falls For Using Special Moves Against Chansey. This Is Why Leftovers Blissey Is Better. https://replay.pokemonshowdown.com/gen7ou-994814124 ⬅️ As You Can See, The Blissey Can Stall Better And Make People Forfeit Quicker.

How does leftovers Blissey have better defense than Chansey? And in your replay, the opponent used special attacks because at that point, he/she/it already lost and had no better options, not because he/she/it "fell for it". Your Blissey didn't do any better than what a Chansey could have done in that situation.
