Hey there, welcome to the weirdest question I've ever had the pleasure of asking.

Basically, if you beat Ultra Sun or Ultra Moon, how few Pokémon could possibly be in your Pokédex? This means that you didn't encounter or catch any wild Pokémon or battle any Trainers that weren't necessary to story progression. And for Trainers that you can win or lose the battle with and still progress the story, you lost to their first Pokémon. You also apparently beat the game with the base form of your starter, the only Pokémon in your party (which also allows you to not battle random Double Battle Trainers). You also refused all gift Pokémon that weren't necessary to receive.

And by beating Ultra Sun or Ultra Moon, I mean completing the main game and the Rainbow Rocket episode.

Sorry for the very odd question, I'm just overly curious.

Ok well first off it's impossible to beat the league with the first form of your starter you would have to Evolve it.
Not impossible. It could be done. The youtuber Alpharad beat the Emerald League with just a Mudkip. So overlevelling your starter a lot, potentially EV training it, that could almost certainly solo the Alolan League.
To ev train you need to run into other pokemon. Even poke pelago needs pokemon in your boxes to upgrade. Plus, even if you do only ev train against 1 or 2 pokemon, it's highly unlikely you will only run into them. Overleveling is almost impossible, as each time you train against things in the grass/water etc. You'll add even more
Vitamins?
Ik alpharad beat emerald with a Mudkip but like sm 4evr stated, there would be no way to level up your Pokemon or train them in nearly any capacity. And vitamins are very tough to come by and with a lvl 5 Rowlet wouldn't help if very much
You can buy vitamins.


Also, just train in a spot with very few Pokemon?
It would be tedious, but you could still get to Level 100, even though you'd be getting about 2 experience per battle at later levels. It would take more times than anyone would likely ever have the patience for, but it could be done.
I don't see why defeating the league with the first form of your starter would be an issue. There's probably at least one area where you can grind for levels without running the risk of encountering any new Pokemon that you either have or have yet to see due to required battles. And if you aren't strong enough to defeat any trainers, you can just keep going back and fighting them and, as long as you get some experience, you'll eventually level up, giving you a higher chance to defeat them, which achieves the effects of grinding while also spending that time to defeat the trainer that you're stuck on. This won't work if you can't even defeat one of their Pokemon, but as long as you can, it's possible. That's how I ended up doing the Elite Four in Emerald, because I was tired of grinding in Victory Road, and I ended up actually defeating them before I expected to. Also, you aren't restricted to just one Pokemon... I know the question says, "This means that you didn't encounter or catch any wild Pokémon," but would there be any issue with catching a Pokemon you've already seen in your Pokedex? Obviously you'd be very limited and it'd be entirely up to luck that you encounter the correct Pokemon, not encountering any wild Pokemon at all would be even harder to pull off than that, and completely luck based.
Also, keep in mind that this entire situation seems to be hypothetical, as even just not encountering any wild Pokemon you don't already have in your Pokedex would be near impossible. The amount of time this takes to do shouldn't matter, so the amount of time it takes to grind to level 100 with low level Pokemon shouldn't matter, as this situation obviously isn't realistic.

I don't even understand that comment. Why am I not allowed to want an answer to a question I didn't write? I'm interested in the answer, and this is a question-and-answer forum? It would be interesting to find an answer to this question.
I'm in the process of treating this as a challenge run that will eventually yield the answer. Thus far I can say that after defeating Hala in the first grand trial in Ultra Sun, the minimum possible seen count is 21.

After playing through the whole game this way, I can report that the answer is 161 on Ultra Sun, or 162 on Ultra Moon (though the in-game dex only shows Alola dex entries, so it will give a number that's lower by 15). If you cared about minimizing owned count, while there are no mandatory gift Pokemon other than the starter, in order to open the gate into Po Town you are required to partake in a double battle (if you only have one Pokemon, you simply don't get to make progress past that point until you genuinely do bring a second healthy Pokemon along). If you're keeping your game free of trades or other inter-game connectivity, this means you have to catch a second distinct species just for the purpose of taking on that battle, and can proceed to the end of the game with just that count of 2. However, if you do allow trades, you can pick up the Eevee egg from Paniola Ranch and trade it off before it hatches to get a second copy of the same starter you chose, allowing you to participate in that double battle while still keeping your Owned count down at 1. Alternatively, you could import your second copy of the starter from Pokemon Bank, and even go up to a full team of 6 copies of the same unevolved starter if you're doing it that way.
