Nice moveset analysis, Hex, never thought Umbreon could be an offensive Special Attacker.  Usually, a lot of times, people usually have Umbreon a typical bulky Dark-Type such as Impish, Bold, Calm, or even Careful natures, but Modest works too.  Hmm, wonder how an Adamant Umbreon would have its movesets?
Thanks
No problem, you would make a great Pokemon organizer in the Battle Factory for an Umbreon moveset. :)

A slight variation on Umbreon, but a useful one nonetheless.

Umbreon @ Leftovers
Ability: Synchronize
EVs: 208 HP / 48 Def / 252 SpD
Calm Nature
- Curse
- Wish / Moonlight
- Payback
- Snatch

Normally Snatch isn't all that great, but this set makes good use of it, working with the fact that most people don't like Umbreon because it's very easy to set up on. Curse is there to pad up his defense and attack, while payback is his attacking move. His HP is much higher than the typical Umbreon, so this helps with wish when he wants to help out a teammate. Most people try to set up stat boosters or substitute on Umbreon and try to go for a clean kill, but snatch is there to mess all that up. If it manages to steal a substitute, more than likely, Umbreon is pretty healthy, because they would have finished you off if you were weak. Snatch can let it take substitutes for itself while still being able to set up uninterrupted. If you want, you could replace Curse with Baton pass to help teammates even more, and payback into heal bell if you weren't afraid of being taunted. He can steal Whirlwinds and roars to preventing pseudo phasing, and since he's not interrupted with cursing, even some fighting types have trouble getting through him without a lucky critical hit.

I like your move set and I think it could work out well, but I noticed that the nature is Calm and lowers your Attack. Wouldn't having a Careful nature make more sense since you still get the Special Defense raise without having to sacrifice Attack?
Sure, go for it.
I think that this helps, my opinion is that Moonlight, Curse, and Payback are good. I just think that it would be better to have toxic instead o f snatch

Gen V

Umbreon (M) @ Leftovers
Ability: Synchronize
EVs: 4 HP / 252 Def / 252 SpD
Relaxed / Sassy Nature
- Curse
- Payback
- Wish
- Baton Pass

Umbreon should have Synchronize because if you get frozen your opponent could get frozen too, which means that you both can't do any damage to each other ( unless the Pokemon switches out).
Also if you use Curse then Baton Pass it to a Dusknoir or something it will have some serious bulk.

Sun Umbreon
Umbreon @ Leftovers
EVs: 200 HP / 252 Def / 56 SpD
Impish Nature
- Confuse Ray
- Toxic
- Moonlight
- Protect

.confuse ray- confuses the foe and can damage them as well as can damage and prevent attacks
.toxic-badly poisons foe
.moonlight-recovery but in sun recovers 3/4 max hp
.protect-i find this usefull online because a.gives you free heeling b.counters opponents with moves like stone edge to run out of pp c.revenge to outrage users-there moves wasted and confusion

so umbreon has great walling abilitys (great hp great def and extremely good spdef) but IMO
putting to many evs into spdef is a waste because most spmoves are usually psychic (no effect) and water and ghost which will both do 1/2 damge due to resistant and sun
this set is good when I use it online though it does have 2 problems taunt (not that common) and fighting

Role: Tank
Generation VI

Umbreon @ Leftovers
Ability: Synchronize
EVs: 172 HP / 168 Def / 168 SpD
Careful Nature
- Payback
- Toxic
- Moonlight
- Protect

Payback: STAB, Umbreon is slow so he will usually go second so it's base power will be 100. You will not be attacking much with Umbreon anyway, this is here just in case.

Toxic: Umbreon is a great Tank so use Toxic to slowly take down your opponent.

Moonlight: Umbreon will have a good amount of health so this works great for using back and forth with Protect and slowly gaining HP with Leftovers.

Protect: Go back and forth with Moonlight and Protect and your Umbreon will take forever to die.

Umbreon is my favorite Eevee evolution and Dark Type in the game.

Bulky pursuit predicting Umbreon
Umbreon
Cat of doom (Umbreon) @ Leftovers
Ability: Synchronize
EVs: 252 HP / 128 Def / 128 SpD
Adamant Nature
- Screech
- Confuse Ray
- Taunt
- Pursuit

You can do two things with this Umbreon: 1) Use Screech, which lowers your opponents defence by two stages. Then you use Pursuit. Now your opponent will switch, or stay, which means your opponent either faces an attack with lowered defences, or a doubled power attack with lowered defences. (I got this idea from the good move combinations page) 2) Use Confuse Ray, then Taunt, which is very annoying. Predict when they switch, and you can deliver a powerful Pursuit. And if they stay, just keep using Screech to make them hurt themselves more. And all the while, you're being healed by the Leftovers! You can have a lot of fun with this Umbreon set.

Theory is good, but if you know what's coming then it's easily played around. Maybe like, surprise factor first time round. After that, it's useless against a smart player
Well confuse ray, taunt and screech will probably get you a long way even if they've seen you use it previously in the battle. But when using this set, and you think it needs something else, just play around with the evs to make them more in attack, and give it another move.

Gen VI

Umbreon @ Leftovers
Ability: Synchronize
EVs: 252 HP / 128 Def / 128 SpD
Careful Nature
- Swagger
- Foul Play
- Moonlight
- Protect

Swagger (Confuse)
Foul Play (Use after Swagger, get the opponents attack up and then use it against them!)
Moonlight (Heal)
Protect (Stall, let leftovers heal and the opponent attack themselves with confuse)

Gen IX
Umbreon
Umbreon @ Heavy-Duty Boots / Leftovers
Ability: Synchronize
EVs: 252 HP / 4 Def / 252 SpD
Tera Type: Poison
Calm Nature
IVs: 0 Atk
- Toxic
- Protect
- Wish
- Foul Play

Thanks to Umbreon's bulk and good defensive typing, it is capable of tanking hits from many threatening attackers as well as provide Wish support to its teammates. Toxic allows Umbreon to punish many Fairy-types and bulky Pokemon that try to take advantage of its passivity. Foul Play denies set-up opportunities from physical attackers while Wish pairs up nicely with other defensive Pokemon lacking reliable recovery. Protect allows Umbreon to scout attacks from Pokemon locked to a move from Choice Specs, Scarf or Band. It also lets Umbreon recover health from Wish safely. However, one should pay attention while using Protect as it can become too obvious which can be exploited at times. Alternatively, Heal Bell could be used in place of Protect in case of the team being vulnerable to status conditions.

Heavy-Duty Boots allows it to switch-in freely without the fear of hazards, but Leftovers can be used instead for additional passive recovery if other teammates can provide hazard removal. Max HP invesmtent is used to maximize bulk and increase Wish's recovery for teammates while 252 SpD EVs are chosen to be as bulky as possible on the special side. Tera Poison acts as an emergency option against Fighting- and Bug-type moves while also letting Umbreon be immune to poison. This can also be used to absorb Toxic Spikes if the team does not have one available.

Gen 9 NU Calm Mind

Umbreon @ Leftovers
Ability: Synchronize
Tera Type: Fairy / Poison / Ghost
EVs: 252 HP / 252 Def / 4 Spe
Bold Nature
- Calm Mind
- Dark Pulse
- Wish
- Protect

This is the Calm Mind set Umbreon uses in Gen 9 NU. Calm Mind Umbreon makes Umbreon not as passive. Calm Mind is used to boost Umbreon's Special Attack and Special Defense, boosting Umbreon's defensive and offensive presence. Dark Pulse is used for a Dark STAB. Wish is used to give Umbreon a form of HP recovery. Protect is used alongside Wish for HP recovery and allows Umbreon to scout for choice locked Pokemon. The Tera Types are options that allow Umbreon to resist or be immune to Fighting-type moves. Tera Fairy / Tera Poison lets Umbreon resist Fighting moves. Tera Ghost lets Umbreon have an immunity to Fighting-type moves.

A favourite of mine.

Gen. IV

Umbreon @ Sitrus Berry / Leftovers / Bright Powder
Ability: Synchronize
EVs: 4 Atk / 252 Def / 252 SpD
Careful Nature
- Payback
- Confuse Ray
- Double Team
- Spite

Payback - STAB, Accurate, Works with the fact that there's no EV investment in Spd.
Confuse Ray - Causes foe to damage themselves, prevents Umbreon from being hit.
Double Team - Reduces the chance that Umbreon will be hit. Even if he is hit he can shrug off even most super effective hits when at full HP.
Spite - PP reduction.

The combination of Confuse Ray and Double Team keep Umbreon pretty well protected. If a worrying move gets used, just reduce the PP using Spite so that it doesn't get used again. Payback can actually be quite powerful, most people expect to be battling a tank rather than an offensive Pokemon when they see Umbreon, and can cause the foe to to switch after taking a couple of powered up Paybacks as a result of low Spd. Synchronize ensures that paralysis is passed on to foes, which can be extremely annoying in combination with confusion or hightened evasiveness, or that poison at least has an upside. For items I find Sitrus Berry, Leftovers or BrightPowder to work the best, although Lum berry could be good to avoid sleep/poison which tend to mean KO for this set.

Seems good, but spite is a bit strange

I used this Umbreon in Pokemon online and got some dirty looks :)
Role: wall buff

Umbreon @ Leftovers
Ability: Inner Focus
EVs: 252 HP / 252 Def / 4 SpD
Relaxed Nature
- Confuse Ray
- Substitute
- Curse
- Feint Attack

Confuse ray (ensures you get some coverage from attacks)
Substitute (Your Wall)
Curse (Buff up)
Faint attack (STAB+ you know you will be slower than your opponent so bite is not a good choice)

I'm surprised no one has posted a Yawn+Pursuit Moveset, so I will

enter image description here
Set: You Shall Not Pass

Umbreon @ Dread Plate
Ability: Synchronize
EVs: 252 HP / 132 Atk / 126 SpD
Adamant Nature
- Yawn
- Pursuit
- Wish / Moonlight
- Protect / Toxic

Yawn: Yawn is amazing for stopping a sweeper in their tracks. It forces a switch which sets up for a stinging pursuit
Pursuit: With STAB and a Dread Plate, Pursuit does more than double its normal damage, crippling the foe that switches
Wish/Moonlight: In order for this set to work, Umbreon has to be able to handle a hit (or maybe even two) from a sweeper. You're going to need to heal after taking that damage
Protect/Toxic: Depending on your healing choice

Yawn and Wish are egg moves, so be warned

I know this is so late, but I'm new to the site.... So, yea ._.

Umbreon is a very bulky Pokemon, it is my 3d and last favorite bulky and dark type Pokemon, Umbreon is a great wall for a team so use one if you can, it has been many favorites to fans and is the most popular eeveelution so it shall deserve a perfect and bulky moveset. It isnt a offensive Pokemon at all but theres one move that is reliable

Umbreon @ Dread Plate / Black Glasses
Ability: Inner Focus
EVs: 4 Atk / 252 Def / 252 SpD
Relaxed / Sassy Nature
- Payback
- Toxic / Screech / Curse
- Confuse Ray
- Wish / Moonlight

With something to power up a dark type move...Payback will get more powerful and with a speed lowering nature since umbreon is very slow Pokemon and will become more powerful and with STAB and (if your using curse setup) Payback is ultimate, Toxic is to poison the target and the poison is getting worse every turn but if it's a steel or poison type Pokemon you are facing then you are screwed but you could go with curse to raise attack and defense and lower its useless speed but if its speed has decreased enough then I guess toxic is trustful, Confuse ray will make the target confused for turns and may hurt the target its self, Wish is reliable all you have to do is be patient for a turn and then you are healed, you could go with moonlight but if there's weather on then moonlight wont heal too much, inner focus will protect umbreon from those horrible flinches so you can still use moves if the target does that and finally with a relaxed or sassy nature. You can be very defensive and help your pay back move by decreasing speed.

This moveset has made over 20 people forfeit, even people who know this still forfeit.

Umbreon @ Leftovers
Ability: Syncronize
EVs: 252 HP / 128 Def / 128 SpD
Relaxed Nature
- Toxic
- Confuse Ray
- Moonlight
- Double Team

This moveset is useless against taunt, but it's still really good.

i would rather go
Umbreon (M) @ Leftovers / Rocky Helmet / Sitrus Berry
Ability: Synchronize
EVs: 252 HP / 150 Def / 106 SpD
Calm Nature
- Refresh
- Wish
- Snarl
- Toxic

a good natural tank better to start off with sweeper in double battles with a protect
really good scout for singles
refresh for any status removal better than heal bell in my opinion has more pp than a heal bell normally
wish for recovery
snarl/charm for stab even without no investment in s.atk/atk + oppa will lose their s.atk and even might be forced to switch
toxic no tank is better than a umbreon with toxic
synchronize is always better as it destroys other stallers

if you want a damage dealing tank staller, always go for a quiet nature
with same evs:

Umbreon (M) @ Leftovers / Rocky Helmet / Sitrus Berry
Ability: Synchronize
EVs: 252 HP / 150 Def / 106 SpD
Quiet Nature
- Toxic
- Snarl
- Wish
- Psychic

How about this cute kittycat.
Umbreon @ Leftovers
Ability: Synchronize
EVs: 130 HP / 252 Atk / 126 SpD
Brave Nature
- Payback
- Sucker Punch
- Toxic / Substitute / Moonlight / Confuse Ray
- Toxic / Substitute / Moonlight / Confuse Ray

So when you play against a Umbreon you think, 'Oh gosh another wall', right? Well this guy seems like a wall, but can be really dangerous. You keep hitting last because your speed is really low, and then, when your opponent is low enough, you hit him with your Suckern Punch, that has priority :)

Okay, so I'm not the best but I think this it atleast usable.

Confused (Umbreon) @ Leftovers
Ability: Synchronize
EVs: 6 HP / 252 SpA / 252 Spe
Modest / Timid Nature
IVs: 30 SpD
- Moonlight
- Psychic
- Hidden Power [Steel] / Heal Bell
- Dark Pulse / Shadow Ball

  • Moonlight (for healing)
  • Psychic (decent power, super effective against fighting)
  • Hidden Power (Steel because of fairy) or Heal Bell (if you can't control IVs)
  • Dark Pulse or Shadow Ball (decent for psychic types)

Okay, I don't think I saw this set but I am currently using this in Gen 7

Umbreon @ Normalium Z
Ability: Synchronize
EVs: 4 Atk / 252 Def / 252 SpD
Adamant / Brave Nature
- Payback
- Refresh
- Taunt
- Wish

Payback - attack power and even though it doesn't do a lot of damage it gets double damage with taunt
Refresh - heals conditions, Z-Refresh heals HP when you can't wait for Wish
Taunt - prevents being setup on, also forces them to either switch out or take double damage
Wish - healing, could use Z-Wish to boost SpD but I keep it for Z-Refresh

You could also use a Darkium Z for a powerful attack or to boost attack with Z-Taunt
