I transferred my shiny Melmetal over from PoGo and want to get 0 Speed IVs. Is there any way to find out its IVs after I catch it but before I save to leave?

You can actually check a Pokémon's IVs directly by going into the menu with 'X', selecting Pokémon Box, and selecting the Pokémon you want to check. Scroll down to 'Check summary', then press 'A' to show more details. Just like that, you'll se your Pokémon's IVs.

The only problem with this is that there's no real indication of whether or not the IVs are actually good unless you're a mathematical genius. What you need is the IV Judge ability. To know more and get IV Judging  ability,  check out the source!

Melmetal mostly never runs gyro ball , cause it gets its signature move, double iron bash which is more reliable

I just checked, and you can leave the GO Park without saving! If you press "Return to Desk" it'll prompt you to save. PRESS NO and you can leave the building without saving, the Pokemon will still be in you party/box :)

Also no my switch is not broken. I put the glass screen protector on wrong so whenever i put it in the doc it cracks a bit :(  the switch is fine and never been in any accident or dropping. Just the screen protector and my dumbness.
