I’m thinking of going and shiny hunting it using the brilliant method and I’m wondering if it’s possible to do so.

The Galarian Stunfisk in Galar Mine No. 2 and the Slumbering Weald aren't static encounters, they're actually wanderers, or roamers.

You can also find them in the Dusty Bowl and Lake of Outrage during a sandstorm, which will definitely have a chance of being brilliant.

What's the brilliant method?
It’s a method of shiny hunting in Sword and Shield. You K.O a lot of a specific Pokémon, for me that’s Stunfisk. This increases the odds of a brilliant Pokémon appearing and the chance of that brilliant being shiny.
Brilliant pokémon = shiny pokémon?
Nah, brilliant Pokémon are Pokémon with that yellow aura around them. If you KO a lot of a specific Pokémon, any brilliant of that Pokémon has increased shiny odds

Brilliant Pokemon are encountered via fishing or symbol encounters. In Galar Mine No. 2, Stunfisk-Galar is considered a wanderer, which can never be Brilliant Pokemon. Your best bet to shiny hunt Stunfisk-Galar is to hatch Eggs via the Masuda Method.
