I don't play OU but whatever.

Stunfisk-Galar @ Leftovers/Air Baloon
Ability: Mimicry
EVs: 252 HP / 4 Atk / 252 Def
Impish Nature
- Stealth Rock
- Yawn
- Thunder Wave
- Earthquake

I think this is an ok moveset. It sets up rocks. It uses Yawn, which makes people want to switch out, and get hurt by rocks. I guess you could give it protect to compliment Yawn, but IDK. Thunderwave just cripples things. I gave it Earthquake since that is a strong move. I made it defensive but it could also be mixed, or specially defensive.

Moves:
- Snap trap
Unexpected and yet manages to cover weakness. This move is essential for this sets strategy.
- yawn
Yep. U snap trap them and lock them in then make them drowsy. Leftovers is for recovery as it would have taken some damage after setting up.
- earthquake
Power
- Stone edge/stealth rock/ ice fang/sucker punch
Stone edge for edgequake, stealth rock for support, so maybe use as lead, ice fang punishes dragons, sucker punch for priority
Other options for items are binding band or grip claw

NATURE: Sassy (+SpDef -Spd)
EVs: 252 Def/252 SpDef/4 HP

Protect/Foul Play
Pain Split
Endure
Stealth Rock

Pain Split and Endure work relatively well together. Protect or Foul Play can both work well, Foul Play is better probably though because it uses the target's Attack stat. Stealth Rock as entry hazard.

I'm not sure Stunfisk is fast enough to use Endure and follow up with a Pain Split effectively- the only way that'd really work is if your opponent gets cocky and tries to set up on your 1 HP Stunfisk, or they are really slow as well. :P
It also doesn't help that a -speed nature is on the set, making it even slower.

•Protect:So you can avoid damage and put them to sleep
