I remember in a anime movie, Latias is able to turn into a human, what about others?(This is in the games, and anime, and if needed/wanted to include, side games such as Pokemon Ranger)

Since i don't know all, i'll just drop it as a comment here

a very notable one to me is Kanon from "Pokemon Heroes: Latias and Latios", being able to turn into a Latias.

(oh btw Kanon is her Japanese name. Sorta forgot the English one)
Oh, it's the other way around, I thought it was Latias takes human form as Kanon, or whatever her english name is.
Hmm, was reading a bulbapedia article about her and I think it says that Kanon is the one who's able to turn into latias, or maybe i'm just tired when i read it so i might not realize that its the other way around :p

Ditto of the Ditto 5 in the Gen 7 games transform into humans. I think Zoroark disguises itself as a hiker in Gen 5. Also I think Mimikyu disguises itself as the trial captain in USUM during the ghost trial, but that might not count as a transformation.

There are a couple.

Some of the obvious and more gimmicky ones include Ditto, Zorua, and Zoroark. These Pokemon can transform and can do that easily. I guess on a lesser spectrum, Mew could do that too, as it learns Transform, but I don't think there is any official confirmation of it changing into a human.

There is also Latias in the third Pokemon movie. The entire movie she is in the form of a Latias, but in the end transforms into a girl. It is unknown if Latios has this power, (or if any other legendaries have this power.

There are also examples of humans turning into Pokemon.

In Kadabra's Fire Red Pokedex Entry.

It happened one morning - a boy with extrasensory powers awoke in bed transformed into KADABRA.

Gengar's Moon Pokedex Entry states it used do be human.

It apparently wishes for a traveling companion. Since it was once human itself, it tries to create one by taking the lives of other humans.

Yamask is said to hold a mask of it's past face

Each of them carries a mask that used to be its face when it was human. Sometimes they look at it and cry.

Cofagrigus

This Pokémon has a body of sparkling gold. People say it no longer remembers that it was once human.

And according to azureshiram

the Latias from Emerald Arc Pokespe that is a friend of Emerald "Em", the main protagonist of Emerald Arc.

There aren't any actual references for Pokemon turning into humans in the anime but there is a movie in which a Latias turned into person named Bianca(not from Black and White) to escape from the evil team. And in the Black and White games, some Zoroarks are able to turn into humans and talk exactly like humans. And some pokedex entries give references to humans and their souls turning into Pokemon. Especially in Gengar's Pokedex entry, which states that Gengar was once a human and Ghastly's tells that 5 percent of it's body contains human souls. And in Honedge's Dex entry it states that the soul of the person who was killed by Honedge gets trapped into it.

Read the comments, in the Lati@s movie, the girl ash meets is Latias, so that's at least one. Thanks anyway though, I didn't know about the Gengar one.
This includes movies, not just the show, which is probably why you didn't find any.
