For example, Sunsteel Strike hits while ignoring Abilities. I am looking for a damaging move that ignores items, not uses them or removes them.

None that outright do so, but I'm sure there's some niche situation where a move doesn't activate a specific Berry or something along those lines. You can really reach and say something like special moves ignore a held Jaboca Berry, or a non-Ice move ignores a Garchomp's held Yache Berry, but that's just grasping at straws by that point.

The closest thing you could get is Magic Room, which disables the effects of all held items for five turns. It doesn't ignore the items itself per se, but it allows other moves to do so.
Does corrosive gas count?
I was thinking of damaging moves that ignore items, like how Sunsteel Strike ignores abilities.
I mean, Pluck and Incinerate take berries away?
Does Bug Bite count in this?
There's Knock Off. If corrosive gas would count if it was damaging, surely Knock Off counts.
I guess it doesn't ignore. Rather it whacks that item out of the playing field.
Simple dude use knock off it will revome targeted Pokemon's item! :D
That doesn't answer my question. I asked for a move that doesn't remove, but ignores the item.
Well, if you use Covet to take a Rocky Helmet, do you take damage?
How would it "ignore" an item?
Like how Mold Breaker ignores abilities like Levitate. It overrides it.
User MeloettaMelody answered a similar question and he couldn't find any moves that ignored items. I think the answer probably is just none.

None( Or you could strongly deny this and search the entire database for a move while slowly losing your sanity).

There aren't any. As mentioned in a few replies, you can make some reaches and say specific moves ignore specific items, but that's too much of a stretch to be a worthwhile answer. Everything else to say has pretty much already been said in the comments.

Now that I think about it, wouldn’t Darkest Lariat ignore an X-Defense?
It ignores the stat boost caused by the item. It doesn't ignore the item directly.
