I want to know if there are any Pokemon that my Mewtwo's attacks are effective against that can stand more than 3 hits. (Basically can my Mewtwo 2HKO anything as long as its attacks are effective).

You can include held items and how threatening they are:

Mewtwo (From Kanto)
Ability: Unerve
Nature: Modest
IVs+EVs: 31, 252

Moves: Shadow ball, Aura Sphere, Ice beam and flamethrower.

Held item: Life orb

Also does anyone know if theres an item that will make my attacks stronger? Right now life orb is best I think.

What format?

Wouldn't a Mega Stone Boost Mewtwo's Speed and Special Attack? Mega Mewtwo Y would be preffered, but Mega Mewtwo X can survive Priority and gets STAB Aura Sphere. Either way, I find Mewtwo and Mega Mewtwo to often get KO by piority users on the 3DS battles, and would suggest using things that can take hits instead, such as Primal Groudon or Mega Rayquaza. :P

You can't 2HKO if there is a Lot of stuff that outspeed and OHKO you. Also, you may never be able to 2HKO Lugia, Ho-Oh, some Primal Kyogre Sets, and Possibly Cresselia without some sort of Special Attack Boosting move. :P

Also, why would you use Gyarados when Mega Salamence and Rayquaza are much better? Also, one (or Both) of them are easily available in Alola. :P
We have standards for formality here. Respect them better please, titles like that aren't necessary.
Whaaaaasa... yeah okay.
Mega Gyarados is the best. D-dance Waterfall Earthquake and Crunch. Also lowest the opponents attack  and allows you to take a not very effective attack if you mega evolve properly.
Mega Salamence also gets Intimidate as a pre-mega ability, but has better stats and gets Aerilate.
But mega Gyarados is unpredictable.

252+ SpA Life Orb Mewtwo Aura Sphere vs. 248 HP / 8 SpD Eviolite Chansey: 179-213 (25.4 - 30.2%) -- guaranteed 4HKO

No, Eviolite Chansey, as well as many other Pokemon, take at least 3 hits to be KOed from the set you gave.
